Terroir: The Rheingau is characterized by its geographic position with only southern facing slopes and proximity to the Rhine river. The deep clay soils are well hydrated although there is little rainfall (530 mm per year). This is due to the Rheingau hills and the humus development from the cover crop management, which has been ongoing for 2 decades. The goal is to maintain natural soil vitality. Cultivation in harmony with nature combined with minimum yields is the baseline for quality, which is further improved by a late, selective, hand harvest.
Vinification: Hand harvest, with several selections of the grapes on the vine and a limited yield. The grapes are crushed and processed gently, followed by a slow and controlled fermentation for a better flavor development. Fermentation takes place in wooden barrels and stainless steel tanks.
Tasting Notes: This young Riesling is a fruity, herbal delight. Due to its residual sugar, which lies somewhere between Trocken and Feinherb, it pairs very well with lighter dishes or served as an aperitif. The Riesling Classic is an uncomplicated, undeniable pleasure to drink.
