Byhur Basque Sparkling Cider
Tradition meets innovation, Byhur means "playful" in Basque. The production of this cider is started as a traditional sagardoa but finished as with a cava or champagne method. The result is a very dry, clean cider with fine cava-like fizz. The lower alcohol content makes it a superior companion for hors d'oeuvres.
Astarbe's recorded history stretches back 450 years, though the true age of the house of Mendiola is unknown. The ancient sagardotegia is situated along the historic Camino Real at the very heart of cider-country, the town of Astigarraga. Their ciders have an exceptionally clean flavour and crisp finish, owing to their proprietary varieties.
