La Draga, Collio, Ribolla Gialla

Overview: Produced exclusively from 100% Ribolla Gialla, the oldest known varietal of Collio, comparable to the Evola varietal of the ancient Romans. In 1891, at the 4th Austrian Enological Congress in Gorizia, this wine was named as the best in the region and deserving of recognition. The Ribolla Gialla grape has a prediliction for sandstone and limestone, or “opoche”.
Location: The vineyards are located at an altitude ranging from 270 to 280 m.s.l. All plants are terraced.
Alcohol Content: 13.5%
Residual Sugar: 0.8 g/L
Total Acidity: 5.04 g/L
Sulphites: 122 mg/L
Cultivation: Culitvated using the short guyot system, with a production of 70-80 quintals per hectare.
The Vines: The vineyard rows are completely turfed with no irrigation system. Harvesting by hand takes place in the last week of September.
Vinification: Soft pressing (1 bar) with maceration is employed for 8 hours. The fermentation process takes place in stainless steel.
